In case anyone encounters this in the future, Microsoft released a fix for this issue on Nov 2021 (kb5007266).\u00a0 \u00a0In fact this is mentioned on the updated version of the document @EricUMD<\/user-mention>\u00a0linked to.<\/p>

In short, if you update your 2019 server and bring it up to date, you will be able to enable BitLocker.<\/p>

Worked for me.<\/p>
